Ratatouille
This was my Ratatouille (original recipe found Here). Wasn't a big hit with the kids because it's all veggies but I thought it was wonderful.Added By Theresa
I didn't have a round dish so I used a regular 9x13 glass baking dish and it still came out great. I like things spicy and added some extra garlic but the rest of the recipe was the same.


BAKED CHICKEN & APPLES
Here's a new one we tried last night. My son and I were the only ones who actually like the apples(tasting like chicken doesn't seem popular) but everyone loved the chicken.

8 chicken parts
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. ginger
1/4 tsp. curry powder
1/4 tsp. cinnamon
Vegetable cooking spray
1/4 c. water
3 apples, cored & sliced
In small bowl, mix together salt, pepper, ginger, curry and cinnamon; set
aside 1/4 of this mixture (1/2 teaspoon). Sprinkle chicken with remaining
spice mixture. Spray cooking spray in fry pan; heat over medium heat.
Add chicken and cook, turning about 15 minutes. (Brown on all sides.)
Pour off and set aside all accumulated oil from pan. Add water and 1/2
teaspoon spice mixture. Stir in reserved drippings. In 2 quart dish,
arrange slices of 2 apples; top with browned chicken. Slice remaining
apple on top. Pour liquid (from fry pan) over all. Cover and bake at 350
degrees for 45 minutes.
